Make cashew sour cream and cashew cream yourself

Make cashew sour cream and cashew cream yourself - recipes + instructions

Make cashew cream yourself - how does it work? Replacing cream vegan can be super easy and has many benefits. Do you ever get annoyed by the amount of waste you create when cooking or baking because you use so many packaged ingredients? Do you want to cut down on saturated fat? Or maybe you're looking for a healthy way to replace cream?

For all these questions I have an answer: homemade cashew cream. The cashew cream consists in the basic recipe only of cashews and water and is therefore really easy to make yourself.

Of course, the whole thing also works as cashew whipped cream or cashew sour cream. How it all works, what advantages it has exactly and what you need for it, I'll show you now.

Replace cream vegan: with cashew cream

With cashew cream you can easily replace cream vegan. The high fat content of cashews serves as a flavor carrier, just like cream, but the fats in cashews are far healthier than the many saturated fats in cream.

Cashew cream gives your dishes the same creamy consistency as ordinary cream, but you eat healthier, more environmentally and animal friendly. Plus, you'll produce less waste. That sounds like a great deal to me.

Plus, making your own cashew cream is super easy and doesn't take long at all.

The nutritional values of cashew cream

Since cashew cream is mainly water and cashews, it contains many valuable nutrients. Cashews are rich in Thiamine, Niacin and Magnesium, as well as a healthy source of Fat and Protein.

Cashews make your own cashew cream

Make your own cashew cream - that's what you need:

Wash the soaked cashews thoroughly and put them in a blender. Now add fresh water so that the water is about 2 cm above the nuts and puree everything until it gets a creamy consistency. This is how easy it is to make your own vegan cashew cream.

For a thicker cashew cream, I add enough water so that the water level is about halfway up the cashews. When pureeing, I then add a little more water until the cashew cream reaches the consistency I desire.

For mixing it is best to use a High performance blender like this one, as this provides a nice smooth cream. The blender I recommend is low in plastic and comes with a glass container.

Why soak cashews?

Phytic acid is broken down during soaking. Phytic acid has positive and negative properties for the human body. If you eat a lot of raw food, then you should make sure that you do not give your body too much phytic acid. This can be easily done by soaking the food in water overnight beforehand and rinsing thoroughly with fresh water.

However, if you do not eat much raw food, it is not so important for you to pay attention to phytic acid. Cashews can also be soaked for only 1-2 hours if you need to do it quickly.

Also, cashews are easier to puree if they have been soaked.

Cashew cream for desserts

Of course, you can also use the cashew cream for desserts. I simply puree 5-10 dates with the remaining ingredients to make the cream a little sweeter. So you can replace cream healthy and vegan and prepare delicious desserts. Alternatively, you can of course use agave syrup or cane sugar.

You can refine the cashew cream as you like, for example with vanilla, cinnamon or lemon juice if you like it a bit tart. For example, you can make a lemon cream.

If you want a cashew whipped cream, then you can use some more coconut oil. Since coconut oil solidifies at room temperature, you can use it to make a nice firm consistency.

Make your own vegan cashew whipped cream - this is how it works

That's all you need to make cashew whipped cream vegan yourself:

  • 125 grams cashews, soaked overnight
  • 5 dates
  • Spices such as cinnamon or vanilla to taste
  • 150 ml coconut oil, liquefied by heating in a water bath
  • Water

Put all the ingredients in the blender. The water level - before you add the coconut oil - should be slightly below the rest of the ingredients. Blend everything on low speed until it has a creamy consistency. If you need the cashew whipped cream quickly, you can put the cream in the fridge, as the coconut oil will harden faster.

Make cashew sour cream yourself

Sour cream, or sour cream, is known for its characteristic slightly sour taste and is often used in desserts or sauces.

Recipe for cashew sour cream:

  • 300 grams of cashews, soaked overnight
  • 300 ml water
  • Juice from one lemon
  • 1 tablespoon apple cider vinegar
  • 1 small pinch of salt

Put all the ingredients in the blender and puree until you get a creamy consistency.

For savory dishes, you can season the sour cream with herbs such as chives or dill and garlic, salt and pepper to your taste. So replacing sour cream vegan is also super easy.

Cashew fruit cream

You can also make a completely ready dessert based on this recipe. Just add fruits to the recipe and puree everything. If you reduce the water content and use some vegan milk, the whole thing tastes even better. Depending on which fruits you use, you may need a little more or less liquid. Just start with a relatively small amount of liquid and add more as you blend until you get the consistency you want.

For a great color, use a mixture of berries, such as blueberries, raspberries and strawberries. You can also use pineapple and coconut to make a fresh, non-alcoholic pina colada cream.

Alternatives to cashew nuts

Nuts to make cream itself

In principle, the recipe works with most nuts. The cashew nuts are particularly well suited to replace cream vegan because of their high fat content. Another nut with a very high fat content is the macadamia nut, with which you can make very good vegan cream vegan itself. For desserts, the almond is also very suitable.

Conclusion about making cashew cream yourself

Replacing cream vegan can be very simple, in which you make cashew cream yourself. You automatically know exactly what ingredients are included. No additives, no preservatives, no hormones, no antibiotics or similar harmful substances that have no place in your body.

Making cashew cream yourself means, of course, consuming food fresh directly after processing. This makes a little more work, but you get the pure freshness.

Also, you can reduce a lot of waste by not using Tetrapaks - in big cities with unpackaged stores, you can even avoid waste altogether by buying unpackaged cashews.

All the best,

Julian from CareElite

P.S.: Of course you can also make your own vegan milk with cashews. More about this you can find in my post on the Macadamia milk vegan make your own.
